- {Make ready 2 of large potatos, cut into 2 inch stripes.
- {Make ready 10 of cluster Beans cut into 2 inch pieces.
- {Get 1 of carrot, cut into long 2 inch stripes.
- {Take 1 of drum stick.
- {Take 1 of chayote, cut into 2 inch long stripes.
- {Prepare 3-4 of butter beans.
- {Prepare 1 of pumpkin, cut into 2 inch long stripes.
- {Prepare 1 of coconut fully grated.
- {Get 2 of dry red chiliies.
- {Prepare as needed of Coconut oil.

- {Get 1 teaspoon of mustard seeds.
- {Get 1/2 cup of tamarind extract.

Aviyal is a traditional South Indian recipe which is made with mixed vegetables, coconut, curd and tempering with coconut oil. This is a must have dish for us during Pongal festival. Aviyal or Avial is a traditional Kerala side dish of mixed vegetables served with rice. An essential component to an Onam Sadya (traditional vegetarian banquet or buffet) that's quite easy to make.
Instructions to make Aviyal - tirunelveli style:
- Heat a Kadai two tea spoons of coconut oil, mustard seeds.
- Once the mustard seeds splutters, add curry leaves, hing and turmeric powder..
- Now add all the chopped vegetables along with the tamarind extract. Add required water to vegetables and keep the heat in low flame for 15 to 20 min..
- Wait until the vegetables are boiled. Meanwhile grind the coconut, green chilli and red chilli into a fine paste..
- Once the veggies are boiled add the ground coconut paste along with 2 cups of curd, few curry leaves paste and salt as required.
- Add 2 more teaspoons of cocunut oil.
- Mix everything using a spatula and set aside for 10 more minutes in medium flame until the raw smell subsides.
- Serve hot with playing rice and ghee or it can also be used as side dish for adai (lentil dosa).
