1. প্রথমে একটা পরিস্কার ছাঁকনিতে টক দইটা ঢেলে জল ঝরাতে দিতে হবে.
2. গ্যাসে কড়াই গরম করে তাতে ৫ টেবল চামচ চিনি দিয়ে ক্রমাগত ৩-৪ মিনিট নেড়ে চিনিটা গলে গিয়ে যখন লাল রঙ হবে তখন গ্যাস বন্ধ করে দিয়ে আরও কিছুক্ষন নাড়তে হবে.
3. নাড়তে নাড়তে ক্যারামেলটা যখন ঘন ও গাঢ় রঙের হবে তখন ১/২ লিটার দুধ আসতে আসতে ক্যারামেলের ওপর ঢেলে দিতে হবে.
4. এবার গ্যাস জ্বালিয়ে নিয়ে ক্রমাগত নেড়েচেড়ে দুধটা ক্যারামেলের সাথে ভালো করে মিশিয়ে নিয়ে বাকি ১ লিটার দুধও ওর মধ্যে ঢেলে দিয়ে ক্রমাগত নেড়েচেড়ে মিশিয়ে নিতে হবে.
5. দুধ ফুটতে শুরু করলে গ্যাস সিম করে দিয়ে আরও ১৫ মিনিট ক্রমাগত নাড়তে নাড়তে দুধ ফুটে যখন ৭৫০ গ্রামের মতো হবে তখন গ্যাস বন্ধ করে দিতে হবে.
6. এবার যে পাত্রতে দই পাতা হবে সেই পাত্রতে জল ঝরানো টক দইটা নিয়ে খুব মোলায়েম করে ফেটিয়ে নিতে হবে।একটা কড়াই গরম করে রাখতে হবে.
7. দুধ যখন ঈষদুষ্ণ হবে তখন একহাতা করে দুধ নিয়ে আসতে আসতে দইয়ের সাথে নেড়েচেড়ে ভালো করে মিশিয়ে নিতে হবে।এইভাবে পুরো দুধটাই দইয়ের সাথে মিশিয়ে নিতে হবে.
8. কড়াইটা ভালো মতো গরম হয়ে গেলে গ্যাস বন্ধ করে দিতে হবে। এরপর পাত্রের মুখ ফয়েল দিয়ে ভালো করে চেপে বন্ধ করে দিতে হবে.
9. দইয়ের পাত্র সারা রাত গরম কড়াইতে বসিয়ে রাখতে হবে। পরের দিন দই সুন্দর ভাবে বসে যাবে.
10. এবার বসে যাওয়া দই ঘণ্টা ২ ফ্রিজে রেখে ঠান্ডা করে নিলেই দোকানের মতো মিষ্টি দই রেডি.
