Nolen gurer Kachagolla step by step
- Prepare cheese/ chana by just boiling milk with(1/2 vinegar+1/2 cup water) slowly stir, it will start making paneer. Then strain water by muslin or cotton cloths by hanging for 40 mins atleast. For this recipe paneer should be removed from excess water..
- First by fingers paneer breaks into crumbles. We do not want smooth paste like consistency. Then make a two portion 3/4 and 1/4.1/4th portion kept separate for future use..
- Take ghee and 3/4th portion of paneer and jaggery, start heating pan with low flame. Continuous stir until Jaggery melts with paneer and make a binding. But don't cook longer either it will be hard. It will take 2-3 mins maximum. If you want more sweetness you can add sugar here..
- When it is comfortable to touch, add rest of paneer with this paneer and start making sweets using palm. Don't press more to make sweets. Do it softly. Initially it tends to break the sweets but keep for some time then it will become firm. But generally this sweet is very soft nature with paneer thin crumbles. Garnish with chopped dry fruits..
- This is less sweet, flavoured sweets so you can eat 3-4 piece at a time..
